Winemaker Notes

This is our first production of Pinot Noir. We hand-pick all the grape, the first load of grape started on September 1st, 2018, only morning loads, de-stemmed with 50% and the remaining as whole berries. Average cold soak for 6 days. 16 days on the skins and double racked to all French oak for 12 months in neutral barrel. Our first vintage displays wonderful aromatics of cherry, blackberry and plum. On the nose after few more minutes of airing, reveal notes of black tea and roasted almonds. On the palate, flavors of red berries with hints of mixed spice and mushrooms. The tannins are velvety and smooth. The finish is balanced with long and nice acidity. Enjoy our first vintage. Only 700 produced.
